- That said, the issues were minor, mostly just chunks of text where they shouldn’t be.
- Always store cooked food separately from raw food, especially raw meats, poultry and fish.
- On each level you control a chile moving left and right at the bottom of the screen with the goal of collecting only one type of waste while ignoring other categories.

—anyone for whom having foodborne illness can lead to further complications—the consequences of a bout of foodborne illness can be much, much greater, so the acceptable risks are accordingly much lower. While cooking food kills off most of the bacteria, a minor number can survive even post-cooking. Given the right temperature range, they can reproduce back up into unsafe quantities. When cooking, stick any leftovers in the fridge right away, as opposed to letting them sit around until post-meal cleanup. The bacterial level is all about exposure—the amount of time and rate of multiplication at a given temperature.
This friend suggested that I hunt down something on the topic that approached things from a scientific perspective, and while looking I stumbled upon McGee. It’s certainly less front-to-back readable than I would have liked, and more encyclopediac. And while it has not exactly unlocked the black art of cooking for me, it’s a great resource book to have in the kitchen. Any time I’m using a technique or ingredient I haven’t used before, I consult Good Harry McGee. And it’s a pretty well-written and researched book too , and as such, it’s fun to pick up and read random sections from, on occasion.

This is the rare book that I am marking as read but not rating. I can’t remember where I saw this recommended or what I expected, but it is definitely not for me. It’s a lovely compendium, but stressful to read when you know you’ll be quizzed on it. It’s a book that is hard to peg, and not one that you’ll read cover-to-cover in one sitting. The writing is succinct but not tedious to follow, and every chapter packs in a spectrum of interesting facts.
The best part is you can change up the toppings every time you make them, and they’ll always be an incredibly easy and delicious dinner (or anytime meal!). If you are concerned about the amount of aluminum in your diet, you may want to stop cooking with aluminum foil. However, the amount that permeates your food when cooking can vary.
